You’ll begin by learning how to joint a whole duck and prepare each part from nose to tail. Under the guidance of expert instructors, you’ll create your own spice blend before curing duck breast to professional standards. The process is detailed yet easy to follow, giving you the confidence to continue curing at home.
Next, you’ll prepare a rich pâté, balancing texture and flavour as you work. Between sessions, relax with coffee and canapés, then enjoy a charcuterie tasting lunch paired with English wine or a soft drink. A guided tour of the working factory completes the experience, offering a closer look at the craft behind Bray Cured’s award-winning meats.
At the end of the course, you’ll take home everything you’ve made, ready to eat or finish in your own fridge.
